Sweet & Spicy Chicken

Hmmm… so where to start? Well if you haven’t read my profile already I am a Pampered Chef Consultant and I do like to cook. I have been asked by several people for recipes or how to make a fun, fast and easy dinner, so I have decided to blog some things from the kitchen. I will be posting recipes, pictures and some awesome Pampered Chef products and deals for those of you who love the kitchen or hate it but are looking for a way to get out of it faster.  I will also add a link to a nutrition chart for all those who are counting their calories:) The first recipe we will start with is sweet and spicy but you have control over how much spice you want. You could really add any side to go with this for a great meal. This is also a great recipe to use with salmon as well but the cooking time is reduced:)


Sweet & Spicy Chicken

Ingredients
4 Boneless, Skinless Chicken Breast
1 tbsp. Olive Oil
1 tbsp. Honey
1/3 cup Balsamic Vinegar
Cayenne Pepper, to taste
Black Pepper, to taste

Directions
Heat up oil in a large skillet over medium heat. Season both sides of chicken breasts with cayenne pepper and black pepper. (Remember less is more) Add chicken to skillet and cook about 10 minutes each side depending on size, until no longer pink on inside.
Meanwhile, in a small bowl, whisk together vinegar and honey. Add vinegar mixture to skillet and simmer until liquid reduces and thickens, about 5 minutes. For a thicker, reduced sauce, simmer for 5 to 10 additional minutes. Serves 4
